Types of flour according to its grinding

Being as we are enthusiastic of the good bread we had pending in the blog to dedicate, of exclusive form, an entrance to the flour. The theme, as you know, tends to infinity and there will always be nuances that make particular flour something unique and different.

In the post we will try to describe, albeit briefly, part of the nature of the flours that we find in the market and unravel, as far as possible, the different nomenclatures that we find in labels or recipes.

There are several ways to classify the flour, by the type of cereal, by the bread making force or according to its grinding, the latter being the one we are going to address. This classification is based on the extraction rate which indicates the number of kilos of flour obtained by grinding 100 kilos of cereal. In other words, it defines how integral a flour is, depending on the percentage of bran it contains.

In our country, the labeling does not usually extend in these data and in a general way we find the flour divided into three types:

White flour without any percentage of bran
Semi- integral or partially integral flour
Integral flour that contains the whole grain and comes from the ground to the stone.
